1 lb petrole sole
6 limes- juiced

1 tomato chopped
1/4 of a green pepper chopped
1 celery stalk chopped
1/2 red onion chopped
1/4 cup chopped cilantro
1/4 cup chopped parsley
1 tbsp white vinegar
1/2 tsp each salt & fresh cracked pepper
A few shakes of Tabasco


Cut fish into 1″ strips, cover with lime juice & ‘cook’ overnight
Pour off excess lime juice and add the remaining ingredients
Stir it all together & serve with tortilla chips or crackers
